Pizza Explosion

Hi friends!

Since I haven’t blogged in a million years, I thought I’d post a fun little recipe to make up for my absence.

PoP Up PiZzA

It’s a unique take on things and is the cousin of the Bubble Up Enchilada.

First grab the ingredients shown above: package buttermilk biscuits {10}, your favorite pizza toppings {I used 4 ounce bag mini turkey pepperonis, 2 red peppers, 1/2 onion, 8 ounces white mushrooms, 6 garlic cloves}, 15 ounce can pizza sauce {I had a little extra leftover in the fridge that I added in}, 1.5 cups shredded mozzarella cheese.

Chop your veggies of choice and sauté in a little olive oil for about 10 minutes…

While those are cooking, cut your 10 biscuits into quarters, like this…

Add the sauce and stir…

Add the pepperonis, biscuits and 3/4 cup mozzarella cheese and mix gently…

Spray your 9X13 pan and dump mixture in. Bake in a 350* oven for 25 minutes. Remove, sprinkle with another 3/4 cup mozzarella and place back in over for 10 more minutes.

{makes about 6 servings}

Top with a dusting of parmesan cheese and serve!

It’s delish…as the biscuits cook, they puff up and act as the crust. There are so many different options here ~ just be sure whatever meat you use is cooked first!

I’m thinking next time I want to try the TJ’s garlic and herb pizza dough and drop that in instead of the biscuits for added flavor.

A Little Bubbly

Wanted to share this random meal that I made over the weekend…

Bubble Up Enchiladas!

Apparently these were all over Pinterest at one point or another, but I stumbled upon them on a little blog, but I cannot for the life of me remember where…

If sweet, cinnamonny monkey bread were to have a savory cousin, I think this would be it.

Again, completely random, but they were yummy. I added some sautéed onions, red peppers and garlic to the ground turkey to get some veggies in there.

Just brown a package of ground turkey along with some chopped onion, peppers and garlic {if you wish}. Once the meat is browned, add an 8 ounce can of tomato sauce and a 10 ounce can of enchilada sauce. Cut your biscuits {10 buttermilk ~ I couldn’t find reduced fat ones, but Ralphs brand buttermilk biscuits are like 2 grams of fat for 3 biscuits so I was good with that} into quarters so you have 40 little bits o biscuit and throw it in with the meat/veggie/sauce mixture. At this point I added 3/4 cup of grated low fat Mexican blend cheese and reserved the other 3/4 cup for the top which I added the last 10 minutes of baking. Mix the biscuits and cheese thoroughly with the meat and then pour into a casserole dish sprayed with PAM or the equivalent and back at 350* for 25 minutes ~ remove, add the other 3/4 cup cheese and put back in the oven for 10 minutes. Serve with a small green salad, additional veggie or fruit.

Makes 6 servings. Believe it or not, this is a Weight Watcher recipe. I believe it’s 8 points/serving on the new point system, but don’t quote me on this.

I’m going to try a {Bubble Up Pizza} but substitute the ground turkey with turkey pepperoni, replace the enchilada sauce with pizza sauce, use low fat grated mozzarella and add lots of veggies like mushrooms, onions, peppers.

Should be interesting, but I will report back….

Dye Another Day

I had all intentions of dying my grays in time for the Easter Bunny.

But after little missy fell ill, I just told myself, “Dye another day!”

So, I mentioned this stuff last week…

{pure darkest brown}

I’ve noticed, while looking at pictures of myself over the years, that I like my hair darker ~ almost black. I do not do the highlights thing. I am a one color all over girl. I have mucho grays. I need to color the ‘do about every 5-6 weeks. I get my hair professionally colored about twice a year, but to save money in between, I color it myself at home.

I hate coloring it myself at home.

Drips. Drops. Spills. Stains.

I’d heard about these new foams or mousses and decided to give it a try.

Love. It.

I was able to color my hairs this morning despite the kids running around screaming. No mess. No drips. GREAT coverage. Pleasant smell.

I picked this up on sale at Target for about 8 bucks.

Bottom line…doesn’t matter if I spend $80 or $8, the grays still reappear after 3 weeks! My hair follicles do not know the diff. I am thrilled that I can now do touch up between my twice a year professional colorings with ease.

For root touch ups I use this…

It’s fantastic and blends well with any professional hair color. Have used it MANY times and will continue to do so.

But today I needed the whole she-bang! I highly recommend L’Oreal Sublime Mousse.

The second best thing about this mousse?

It’s calorie free.

 

Desperate

Hello, floppers!

Trying to keep upbeat here…

I kept Elliott home again today {so much for perfect attendance}. I just want to make certain that she is “nit free” because I DO NOT want my child to be {the one who infected the whole school}.

If we had a swear jar, we’d be able to send the family on a European vacation for a month just from the past 2 days. Many of these lovely words have been said in my head, of course, but a {few} may have slipped out. Once or twice.

In perusing the internet, I read that hair dye is good for {killing} the lice.

Awesome. I decided to kill two birds with one stone and do some preventative work on myself AND cover the grays. I am learning real quick that I will stop at nothing to get this household back to a {normal} working mode.

That said, Holden will have his head shaved this evening when Jay gets home.

CANNOT wait to read it. We were sitting in the B&N parking lot, with the car running, and Elliott kept asking, “Mommy, why aren’t we going?”

“Shhhh, honey. Mama’s reading.”

Looking forward to really reading this book from cover to cover this evening when 50% of the household is tucked into bed. I really, really need this book right now.

Never Say Never

I am thrilled to say that I am 99% done with our Christmas shopping. I went out again last night and hit 6 stores in 3 hours and made HUGE progress.

Ironically, the gift that I am the most excited about is one that I said I would NEVER get for my kids!

I am not a fan of those shoes that light up. My Mom has asked a million times if she could buy the kids a pair of “tennies with lights”. Every time I said, “NO!”

Well, Ladies & Gents (if I have any male readers ~ which I would love!) I kicked it up a notch and purchased something for Holden that I am still in semi-shock over, but at the same time I am SO excited to wrap up, place under the Christmas tree and see his face when he opens them in 6 days!

I’ve been wanting to get him a little pair of cowboy boots. He loves his froggy rain boots so much that I either wanted to get him pair of Uggs or cowboy boots. EVERY TIME WE’RE IN KOHL’S IN THE SHOE DEPARTMENT HE SPOTS THESE “WOODY SHOES” AND SAYS “NEED WOODY SHOES!” Every time I say “Maybe Santa will bring them to you.” Thinking in my head, “There is NO way you’re getting those shoes!”

Last night, Kohl’s was my 4th stop and I went to the shoe department looking for some cheapo little fake Uggs (AKA Fuggs) for Holdy. Nothing for boys. Then, something came over me and I made myself walk over to the “Woody shoes” and look at them. Now, here comes the best part…the Woody shoes are COWBOY BOOTS! Suddenly all the fear of these Woody shoes left me and I considered getting them for him for Christmas. Afterall, I had a 30% off coupon so that would make them a little less painful to pay for.

I grab his size and continue to walk around the store browsing. The more I walked, the more excited I got about these boots. There is something so cute about a little boy in cowboy boots paired with some random shorts or even some pajamas!

I go to the register to checkout and notice something even MORE terrifying……….are you ready for this……….THEY ARE LIGHT UP WOODY & BUZZ LIGHTYEAR COWBOY BOOTS!!!!!!!!!! They light up! I almost put them back, but then, all of a sudden, that made them more attractive. I don’t know what came over me. Maybe it’s the spirit of the holidays and knowing how much he is going to LOVE opening these. The look on his face will overshadow all my fears and hesitations about buying light up shoes.

Note to Mom: This is a one time deal. This is a special circumstance. If you still have the urge to get them some light up tennies, please save your money.

This is just more proof that you should never say never! What’s next? Mom jeans? Fanny pack?
