Back to near 70*.

The January weather can’t seem to make up it’s mind. I love winter beach days, but truth be told, we need rain and I want a few more fires in the fireplace before Spring!

Yesterday we had the perfect family day. We attended Saturday evening mass so we were able to sleep in!

Elliott made Holden breakfast in bed, we dropped bags and bags off for Saint Vincent De Paul, browsed Old Navy, had lunch at a new fave, Sharky’s {Jay & I split the shrimp tempura burrito!}, took Holden for a haircut, I got our breakfasts for the week prepared {muffin tin fritattas ~ will share the recipe once I get it tweaked a bit}, Holden finished about 50% of this week’s homework, made Pioneer Woman’s Hamburger Soup for dinner and after I got the kiddos tucked into bed, I watched Sean & Catherine’s wedding! Did anyone else catch it? My favorite was the ceremony seating with the mix of benches, vintage wing back chairs and couches….love, love, love.

Back to the soup…

It was amazing and so healthy and full of flavor. Warning: there is a lot of chopping, but totally worth it.

The only change I made was to add a whole head of garlic and doubled the cayenne. 😉

It was perfect and I can’t wait for the leftovers tomorrow night.

Hey friends!

So here we are one week away from February and I haven’t taken the time to sit and blog. When I read other blogs, I start to miss the daily/every couple days entries. My GOAL is to sit down more and chime in even if it’s just a new healthy recipe I’ve discovered or a little craft I whipped up or a little facelift to the house or a fun, frugal find I came across along my travels.

I miss this space and connecting with you.

Here is what we’ve been up to in the new year {instead of blogging}…..

{Researching monthly quotes for our chalkboard. I love updating this inspirational piece that hangs in the hub of our home. I have another old/outdated framed graphic that I’m going to spray paint and turn into a second chalkboard. It’s on the list of “Things To Do”.}

{This little gallery wall was swirling around in my head for months. I had finished re-doing the aqua table over the summer and couldn’t wait to get something hung over it. This happy space is in our master bedroom and I just love it. It took me awhile to source the makings of this space, but I love the way everything came together. The mirror is from Target clearance, the “I” & “U” hooks are from Anthropologie clearance, the sweet little chalkboard hook with the heart {with hat} is to help support my friend Lena and her heart for Acres Of Love here, the 8 X 10 prints on the clipboards were a gift from sweet Lindsay at my baptism last Spring and can be found here and the smaller 5X7 prints can be found here and here.}

{I love finding printables to stick in these two red frames with the change of seasons or holidays. I just searched FREE Valentine’s printables on Pinterest and voila!}

{Over Winter Break we had some friends over for the day and the mamas made these fun canvases that I spotted on Pinterest. We had to break the boys away from the PS3 and the girls away from their Rainbow Looms to paint their hands and feet, but I adore the way they turned out.}

{I love that Holden’s birthday is in February because it gives me something to focus on after the letdown of the holidays. I always start planning and shopping for goodies in January and let the party planning begin. This year he is having a few little boy buddies over for an early morning pajama party…more fun details to come!}

{With the new year comes the promise to eat less and exercise more. I try to drink plenty of this water daily and find it a little more interesting than plain old H2O. Add a sliced lemon, half a peeled and sliced cucumber and some fresh mint leaves to your water. I refill the jar several times before changing out the produce. Per Pinterest, this concoction is good for detoxing. I’ll let you be the judge 😉 }

{I’m trying to be better about reading the calorie count when in restaurants. On our Santa Barbara day trip last Sunday, I ordered this crispy Asian salad with less than 350 calories at silvergreens. I didn’t eat the roll, but the salad was delicious and filling.}

{At home I’ve been trying to create flavorful, lo-cal versions of my favorites. I could eat pizza every day all day, but with this BBQ chicken tortilla pizza, I don’t need to feel guilty. Ezekiel sprouted grain tortilla, 2 tbsp BBQ sauce, red onion, cilantro, 3 strips of precooked chicken (TJ’s), 1/4 cup lite mozzarella cheese and some Sriracha drizzles added after baking for 8-10 minutes at 325*. It’s around 300 calories and will most certainly take care of your pizza cravings!}

{With friends posting about Snow Days and single digit temps in other parts of the country, it still amazes me that we are on the beach and the kids are frolicking in the surf in mid-January. Our MLK weekend was made perfect with a little day trip to Santa Barbara and we hope to do more of these throughout the year. It’s so easy to get holed up in our little valley, but it sure was nice to take a drive up the coast for the day and still be home in time for dinner and a relaxing evening.}

So, that’s what’s been goin’ on ’round here for the past several weeks. It’s been nice to have a break from soccer, but Spring will get busy again with baseball for Holden and AYSO for Elliott along with some after school enrichment classes that start up next week! Just taking it day by day……

Season’s Greetings ~ 2013 Style

I don’t know about you, but the minute I drop the 120+ Christmas cards into the big blue mailbox at the post office drive-thru I can breathe a sigh of relief. I like to get them out fairly early so they aren’t hanging over my head too far into the season. But, getting them out early means that you have to have your picture and your card in the works before Thanksgiving! We usually just include the kids in our Christmas card photos because honestly, who wants to see a couple of tired, 40-something parents?!?

This year, on Thanksgiving weekend, we headed to nearby Mentryville on a Sunday afternoon and Jay snapped a few pics. I was, of course, determined to get “THE picture” that day so I could get on with the Christmas cards. I had already scoured Shutterfly, Costco, Walgreens, you-name-it for a template that I liked. I found one on the Target site that I loved which coordinated with the paper that I chose for our annual letter. Score!

For me, coordinating the kids’ outfits is the hardest thing about photos. Do we want formal or casual? Plaid or stripes? Traditional red & green? As I was wandering through Target one day {not unusual, of course} I noticed that the Levi’s dENiZEN jeans that fit Holden so well were temporarily marked 40% off. I immediately grabbed the camo pair that I had been eyeing for full price in the last size 6 and knew that I was going to work these into the holiday photo somehow. Then minutes later I visited the girls’ clothing section and found this lonely camo shirt {from the Disney D-Signed line} hanging on the clearance rack for 50% off ~ about 10 bucks. Done.

I knew Elliott would wear her favorite Old Navy skinnies, but now I was on the lookout for a top for Holden. I quickly ducked into Crazy 8 on Black Friday and found a green and blue checkered plaid button up and fun graphic tee for Holden {both for under $10!!} Done. I like to layer the short sleeved tee on top of the button up…the saleslady looked at me funny when I told her that’s what I was going to do, but I think it looks darling….er, cool.

He needed some shoes so I popped into Children’s Place and found the little brown boots that I thought would be good church shoes since he always seems to wear either his beat up tennies or flip flops to mass. Black Friday deal on the boots ~ $9 and change! Done.

I didn’t order enough of the above card and Jay needed extras for his co-workers so I reordered 25 more cards with this simple chalkboard design…

Nuts For The Holidays

A couple months ago my friends Erin & Rachel hosted a little West Coast IG meet up with Canadian and Arizonian friends, Melisa & Rachel.

Seven of us sat around a beautiful gold & mint themed dining room chatting, noshing, making all kinds of hot nut jokes and giggling like a bunch of tweens.

Erin made an old Marta Stewart nut recipe and we all immediately spooned another helping on our plates after the first sample.

The flavors in this are indescribable. They mesh together amazingly.

Here is what you’ll need…

5 cups mixed nuts, such as walnuts, cashews, almonds, pecans, and hazelnuts {I subbed peanuts for the pecans and used 1 cup of each nut}

Note: use unsalted nuts

1 tablespoon extra-virgin olive oil

  • 2 small shallots, thinly sliced crosswise into rings to yield about ÂŒ cup
  • 3 garlic cloves, thinly sliced lengthwise
  • 2 tablespoons unsalted butter
  • ÂŒ cup coarsely chopped fresh rosemary
  • ÂŒ teaspoon cayenne pepper
  • 1 tablespoon firmly packed dark brown sugar
  • 1 tablespoon kosher salt

Here is what you’ll do…

Preheat oven to 350 degrees.

Arrange nuts in a single layer on baking sheet and toast until golden…8-12 minutes.

Transfer to a large bowl. Add shallots and garlic to hot olive oil in a small skillet over medium heat.

Fry until golden brown. Remove to paper towels and set aside.

Pour melted butter over nuts. Stir in rosemary, cayenne, brown sugar, and salt. Add shallots and garlic and combine well.

Serve warm. Nuts can also be reheated in a 300 degree oven for 8-10 minutes but watch carefully.

Store in an airtight container….that is IF there are any leftover.

I haven’t started my holiday baking yet, but I did make a batch of these to take to our PTA Teacher Appreciation brunch last week.

Several people asked for the recipe so I know they were a hit. I mean, why wouldn’t they be?

I served in a bowl with a big spoon with some fancy ziploc bags on the side so they could take as a snack to their classroom.

I cannot wait to make these to snack on while our house is full of holiday visitors.

They’d be perfect for neighbors or as hostess gifts, too!

Christmas Goodies For A Buck And Under

At the holidays especially, I like to acknowledge and thank all the people who we see on a daily weekly basis that are a big part of our lives.

If there is any time of the year to stop and take a little extra time to prepare and present little tokens of our appreciation, to me, it’s the holidays.

I’ve learned that it doesn’t have to be a lot, but just a small something that is wrapped with lots of love and care.

Tonight I’m sharing three inexpensive little gifts all which ironically enough I learned about from Instagram!

Last year an IG friend from Hawaii posted the little Bath & Body Works hand sanitizers tied up with yarn along with a lollipop and I thought it was the cutest. I immediately stalked my local B&BW for their after holiday sale and ended up getting the small pocket size hand sanitizers for 75% off ~ about 38 cents each!

For Elliott’s class this year each student is receiving a candy apple anti-bacterial gel and a candy cane Tootsie Pop. I’m adding a little tag that reads,”Have a healthy and happy holiday! See you in 2014!”

I did similar treats for her soccer party which included the holders that I picked up for 25 cents last year…

For Holden’s Kinder/First grade class, I picked up some knit gloves from the dollar bins at Target. Skull for the boys and rainbows/stars for the girls. I just wrapped them in little treat bags from Dollar Tree and added a label that read, “Bundle up and stay warm over Winter Break. See you in 2014!”

Another IG friend posted something about Target having the “Yes to” lip balms for $2.99 with a $2 off coupon affixed to the package! It took me a couple weeks, but our store had several and I grabbed about 15 of them for our yard duties, aides, cafeteria workers and librarian.

Again, a dollar, but I wrapped them up and added a little note to make them a little more special…

The ziploc baggies are also from the Target dollar bins and came with the {enjoy} toppers!

This last little gift idea came from my friend Julie via IG, as well.

I’ve seen this floating around Pinterest, but had forgotten about it. Who doesn’t want their toes all done up for the holidays?

I found the polishes at Ross for a dollar a piece ~ 6 for $5.99. And if glitter doesn’t scream “HOLIDAY!!”, I don’t know what does.

The sweet tags are a free download from Andrea over at Knitty Bitties.

These are perfect for babysitters, hair stylists, fellow mamas, dance teachers or any female really.

I picked up some cute little 1.69 fluid ounce body butters, also at Ross for 6/$5.99, to go along with.

Finding these little deals is sometimes time consuming, and it does require some planning ahead, too.

The key is to but it when you see it and tuck it away. There are TONS of cute wrapping options at all the dollar stores right now.

I hope these ideas are helpful. I joke that I need to stop checking Instagram, reading blogs and going onto Pinterest because I want to do everything!!

I have to remember that there is always next year and we all know how the holidays sneak up on us. They’ll be back before we now it….

Have A Seat ~ Visit To Santa 2013

Santa shimmied down the chimney of our local Westfield Mall on November 15th.

The kids walked right on up and had a seat on his lap on November 17th.

No line.

No waiting.

Holden had all the time in the world to talk Santa’s ear off about Skylanders Swap Force Starter Pack.

Elliott simply requested an iPad Mini.

We were in and out again this year.

I am happy. I have my 5×7 ready to be framed and perched on our holiday mantel.

This is the 9th year in a row that we’ve gone to a Westfield Mall for our Santa picture. I am all about tradition when it comes to this sort of thing. Each year I display all our Santa pics from 2005 to present. I love seeing how much they change from year to year.

We were fortunate and never had any tears when it came to Mr. Claus. Elliott & Holden were always eager to have a seat on Santa’s lap and whisper their wishes into his ear.

I must add, however, that Elliott and I went around and around about her wearing this darling ROXY plaid flannel for the pic. She had other ideas which involved Justice shorts and a tank top {her argument was that they were purple and matched Holden’s outfit}. After explaining to her {OK….bribing} that I wanted them to look festive and “winter-ish” she reconsidered and ditched the Justice idea.

I am happy to say that I have a good handle on Christmas this year. Several little gifts purchased and wrapped. Classroom goodies in the works. Annual family ornaments purchased.

After Thanksgiving we have exactly 26 days until family arrives, feasts are prepared, Christmas Eve Mass is attended, gifts are scattered under the tree and egg nog is sipped in anticipation of Santa’s arrival.

For as much running around and stress that I am prepared for, I am also looking forward to having a seat, putting my feet up, staring at our old-fashioned trimmed tree and listening to Christmas carols old & new.

But not before giving thanks with a turkey and all the fixins a week from Thursday…

Off to make my shopping list!

Jumpstart To The Holidays ~ Candy Cane Vodka {Recipe}

Daily I find myself penciling things into my planner from now until the end of he year…yes, I am old skool and still write stuff down on a calendar!

With each reminder, time and date that I enter, I become more and more aware of how fast the holidays come and go. Each year I try to do better at being more organized and less stressed.

Last week I came across these gorgeous Threshold decanters at Target for 70% off.

Unfortunately they only had two and unfortunately they’re only sold online, but I snatched them up and thought I could fill them with homemade infused vodka for Christmas.

Easy.

I love the festive color. Going to pour it into these decanters & mason jars and pair it with a nice hot cocoa mix for a couple friends and neighbors to help with burning the holiday midnight oil.

Also going to add a recipe for this holiday martini…

Candy Cane Snowtini

{via}
Substitute “parts” for “ounces,” and this will make 1 cocktail.

2 parts Candy Cane Vodka
1 part simple syrup (equal parts sugar and water, boiled until sugar dissolves)
1/2 part heavy cream

ice

mini candy cane to hang off the rim of your martini glass

In a cocktail shaker filled with ice (or leak-proof water bottle, if you’re resourceful like me), mix Candy Cane Vodka, simple syrup and cream together. Shake vigorously for about 30 seconds.

Put An Egg On It

Jay’s favorite Red Robin burger is the Royal Red Robin which is served with an egg atop the patty.

Personally, I prefer the Bonzai Burger….

Last Christmas my brother-in-law gave me The Meatball Shop’s cookbook. Apparently this is a hip joint where all the cool kids hang out in NYC’s Lower East Side.

Since we’re old, uncool, suburban soccer parents that live clear on the opposite corner of the country, we can still experience the hipness that is TMS in the privacy of our own cluttered, kids-running-amok environment.

I put Jay in charge of figuring out tonight’s dinner and he came across the “Steak ‘N’ Bacon Cheddar Balls” {every man’s dream!} saying that it reminded him of his precious RRR Burger…

I was a little skeptical of the egg on my burger and was going to skip it but, decided YOLO {you only live once} and gave it a shot.

It’s actually realllllly good!

Here is what you need:

3 tablespoons olive oil

1 onion, finely diced

8 ounces bacon, diced {about 1 1/2 cups}

2 pounds 80% lean ground beef

6 ounces cheddar cheese, grated

3 large eggs

1/2 cup bread crumbs

2 teaspoons salt

Here is what you do:

Preheat the oven to 450*F. Drizzle 2 tablespoons of the olive oil into a 9X13-inch baking dish and use your hand to evenly coat the entire surface. Set aside.

Heat the remaining 1 tablespoon olive oil in a large frying pan over medium-high heat. Add the onions and bacon and cook, stirring frequently, until the bacon has browned and the onions are translucent, about 10 minutes. Using a slotted spoon, transfer the onions and bacon to a plate and place in the refrigerator to cool.

Combine the ground beef, cooled bacon and onion mixture, cheddar, eggs, bread crumbs, and salt in a large mixing bowl and mix by hand until thoroughly incorporated.

Roll the mixture into round, golf ball-size meatballs {about 1 1/2 inches or 2 dozen meatballs}, making sure to pack the meat firmly. Place the balls in the prepared baking dish. {I read the directions wrong and made 12 large meatballs and roasted a little longer ~ about 25-27 minutes}

Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165*F.

Allow the meatballs to cool for 5 minutes before serving.

I placed one meatball sliced horizontally onto a toasted kaiser roll with some spinach on the bottom half and topped with a sunny side up egg, fresh ground pepper & Sriracha.

Served alongside was some zucchini that I tossed in olive oil, salt & pepper and some crushed red pepper and roasted at 400* for about 20-25 minutes.

This is a meal that probably should not be eaten more than once or twice a year. It was fun to experiment with the egg and try another meatball recipe from this book.

Since we have 9 huge meatballs left, I think we’ll have those with a salad or some other roasted or sautĂ©ed veggies and skip the egg and bun!

I think it’s safe to say that you could file this recipe away for Father’s Day and make almost any man happy with it.
