If you have a daughter that is under the age of 6 or 7, chances are they have had a pair of these Circo ballet flats from Target!
I’ve been trying to get my hands on a red pair FOREVER! I always wait until it’s too late and they’ve all been purchased for little Dorothy Halloween costumes.
Last year I wanted the silver pair for her fairy costume and had to settle on the black. She wore them into the ground through the holidays and into the New Year.
Toes scuffed and leaving a trail of glitter around the Santa Clarita Valley, I’m sure.
But she loved them and they went well with leggings, jeans, skirts, dresses…..heck, even pajamas!
This year I’ve been stalking the children’s shoe area and am thrilled to say that we are now the proud owners of a RED pair of glittered ballet flats!
Thanks, Gramma Kathy!
I know….the things that get a stay-at-home-mommy excited!

I love Irish oatmeal.
It’s steel cut and much chewier than your instant variety.
When we go to the cabin in Yosemite, I must have this for breakfast at least once. With fresh fruit. And brown sugar. Lots of brown sugar.
I discovered that Trader Joe’s has their own now and decided to try it since it was significantly cheaper than the McCann’s.
My new fave breaky is a serving of this with fresh blueberries that I add about 2 minutes before it’s done cooking. They get all nice and soft and burst in your mouth. I also add a bit of lowfat milk and about a tbsp of brown sugar!
Sooooo yummy and filling!
Sticks with you through the morning.
No, it’s not instant, but it is worth the 8 minutes on the stove.
Grilled peaches with vanilla ice cream for dessert!
*****
Jay cheated and used McCormick Grill Mates Baja Citrus to marinate the fish.
I just flaked the fish, added some honey-cumin & chipotle slaw and a little salsa:
Almost like Rubio’s!
{Next time we’re going to try small flour tortillas}
For the salad, I just cut a romaine heart lengthwise, sprayed with a little olive oil cooking spray and grilled for 2 minutes on each side. I added some grilled red pepper, onion and sweet white corn and topped with TJ’s cilantro dressing. {Have you tried this dressing? It’s in the refrigerated section and it’s remarkable. Thanks, Mom!}
This was our first “grilled salad” experience and it was delish. The lettuce still had plenty of crunch in case you were wondering about super soggy salad! Will definitely be grilling our rabbit food more often.
For dessert, I had some over-ripe peaches that we needed to eat up. I just added a tiny bit of water to a little brown sugar and glazed the halved, seeded peaches before Jay grilled them for a few minutes on each side. {No oil}
They paired perfectly with the vanilla ice cream I whipped up:
The grill still had some of the cedar plank smell on it so the dessert had a nice sweet, tart, smokey mix of flavors.
Grilled fruit rocks!
And so do cedar planks!
Check them out if you haven’t done so already. Perfect for poultry, shrimp and even lobster.

I’ll leave you with a few other moments from our Sunday…
{Superchargerboy!}
Hopefully a sign of things to come this season…the Chargers being our superheroes IN the Superbowl!

There was a 40-acre brush fire about 4-5 miles from us yesterday.
We were on our way to the pool and were stopped in our tracks by a couple Sheriffs and this helicopter taking water out of the pond at our clubhouse!
Craziness to watch!
There were two ‘copters that would take turns running water to the fire.
Those heli pilots are amazing….how they just put it down in the tightest of spots, grab the water and run!
It was chili lime marinated flank steak this evening…
This was our first flank steak…it’s a great cut of meat, super lean, and if cooked and sliced properly is extremely tender.
I marinated it in the juice of 2 limes, 4 tsp. canola oil, 1 tsp. kosher salt and 2 tsp. chili powder. Just toss these 4 ingredients in a zip-loc bag along with the meat (1-1.25 lbs.) and throw in the ‘fridge for at least 3 hours.
Cook 5 minutes on each side, let sit for 5-10 minutes and then slice thinly against the grain, on an angle.
I warmed some corn and flour tortillas (fajita size) on the stove burner, drizzled a little chipotle lime crema, a few strips of meat, grilled red peppers and onions, peach pineapple salsa, shredded cheese and a jalapeño ring.
YUM!
Looking forward to having the rest on a salad with some blue cheese and possibly some mini tortas with avocado crema!
Since I began trying to really count points and eat right during the week, I’ve been obsessed with the Oroweat Sandwich Thin.
Only 1 point on WW.
No high fructose corn syrup.
My friend, and loyal reader, Lisa turned me onto a new sandwich and I am hooked.
I may have eaten 4 of them in the past 2 days!
Just grill some veggies: eggplant, zucchini, peppers, onions or yellow squash.
Slice some cucumbers.
Spread a half or whole serving of cream cheese (I like the whipped one with chives) on your lightly toasted thin and then add the sliced cucs and roasted veggies. Top with just a little sea salt from your grinder.
If you count the olive oil you used for grilling, this whole sammie is about 3 points (depending on how much cream cheese you use).
It’s so filling and flavorful.
Thanks again, Lisa!
I need to limit myself on these otherwise I may tire of them and I certainly don’t want that to happen!
If you’re a sandwich lover like me, are you always looking for new lunch possibilities?
I am.
What’s your current go-to lunchtime favorite between two carbs?
I’d love to hear what you’re packing in your picnic baskets this Summer!

1 cup coffee with 2 tbsp. creamer: 2 points
1/2 cup plain fat free greek yogurt, 1/2 pack Splenda, 1/2 banana & just a tad of honey: 2.5 points
We did pizzas on the grill again last weekend and they were even better than the first time.
This time I used only one package of Trader Joe’s dough, divided it in half and made two thinner crust pizzas. This resulted in a much more crisp crust and not so filling….yum!
We tried the garlic & herb variety this round and it was out of this world. I had some leftover meat sauce in the freezer that I thawed out and used. Jay grilled some zucchini, a rainbow of peppers and an onion which we added to one pizza. The other was my all time fave ~ pepperoni & pineapple!
I don’t think we’ll need to dial out for Dominos or Pizza Hut anytime soon.
Sorry delivery boy!
