Spinach Slurpee

Yesterday morning I whipped up our first {green} smoothie.

Used this recipe, but omitted the chia seeds {my mind immediately goes to the Chia Pet commercial….}

I did add a splash of orange juice to help get the blender going.

First, I started with some crushed ice, o.j., half a mango and several fresh pineapple chunks. Blend that to make room for several handfuls of baby spinach {I use organic since this is one of the dirty dozen} and then blend again.

I love the wheatgrass shots at Jamba, so I’m not afraid to drink green slime!

This was very good. The sweetness from the mango and the pineapple take away much of the spinach taste.

Next time, we’ll try this one.

I was just kind of off today…we all wore green, but that was about it.

We received an invite to the neighbor’s for shepard’s pie and green beer and I just sort of dropped all plans to do anything here at home! Shame on me. The kids had a fun time at school and I had a good early morning walk and found a few {pots of gold} on my errand running! Oh, the little leprechaun DID turn out toilet water green ~ that was a hit!

Next year corned beef & cabbage and some Irish Car Bomb cupcakes, for sure.

Struggle

Today was the first day back to preschool after 2 weeks off for this little one:

Even though he was in bed at 8pm on the nose, it was still a struggle this morn…

Too many late nights.

Too much pajama time.

Too much indulging.

Too many mornings of sleeping in.

{BTW, they do serve sodas in beer mugs at Islands and he was just eating the ice :-)}

I had to peel his jams off of him and pry his jeans and shirt on.

I had to promise him some {chocolate} milk in his sippy.

And a drive-thru at CBTL for a banana nut muffin.

Yes, it was breakfast in the Britax this morning.

Dusted off the crumbs in the preschool parking lot and we were on our way.

He was so happy to see his old classmates…and meet a new one.

Big hugs to Miss Cathi and some new play-doh and he was good to go.

Elliott and I ran a couple fruitful errands where I added these to my collection…

That’ll be my New Year’s resolution.

Because I’m tired of making it be “lose weight”.

But I LOVE my new metallic beauties.

Shot of Espresso

This Monday called for all the caffeine possible!

It was Espresso Rubbed Flank Steak and Asian Green Beans for dinner this evening…

Notice the absence of carbs on the plate…

I’m trying REALLY hard.

Turning over a new leaf.

Next time I will for sure make the green chile pesto to go along with the flank steak. I must say I loved the espresso rub ~ not over-powering in the least bit ~ very subtle coffee flavor and an unexpected kick from the chili powder.

The green beans are a WW recipe from a million years ago…

1.5 pounds green beans, trimmed

3 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon granulated sugar

6 cloves garlic, minced

1. In a large pot of rapidly boiling water, cook green beans until just tender, 4-5 minutes.

2. While beans are cooking, in small bowl combine soy sauce, oil and sugar; set aside.

3. Drain beans; set aside.

4. Spray wok or 10″ skillet with nonstick cooking spray, place over med-high heat. Add garlic, cook, stirring constantly, until softened, 20-30 seconds. Add green beans; cook, stirring and turning constantly, until well coated, about 2 minutes.

5. Add soy sauce mixture; continue to stir and turn until most of the liquid is absorbed, 1-2 minutes.

Makes 6 servings.

1 point per serving.

68 calories, 2.4g fat, 4g fiber

Green Day

Must be St. Patrick’s Day!

The green food coloring is out in full force.

Green Oatmeal & Bananas

(Although it could almost pass as guacamole!)

Holden and I shared the oatmeal while I drank this:

Irish coffee (without the Irish-ness!)

Oh, and I had a moment of weakness last Friday and went thru the McDonald’s drive-thru on the way to Elliott’s dance class for one of these:

….and, UM, they were not selling them anymore! What? It was only March 12th! How are you NOT going to sell a Shamrock shake AT LEAST until March 17th? How ridiculous is that?

But, I did a little research and, according to livestrong.com, there are 550 calories in a medium Shamrock shake. So, I guess it was a blessing in disguise.

10 years ago today I was in Dublin celebrating with many pints of warm Carlsberg! And just for the record, they do not wear green over there on St. Patty’s Day. I told them that if you don’t wear green that you’ll get pinched….they thought that was ridiculous and had never heard such a thing! So there you have it, if you’re even in Ireland on March 17th, no need to pack any green articles of clothing.

I will dig through my box of old photos today and see if I can’t find a pic from 10 years ago! WOW!
