Floating Away

Root Beer floats are so {summer} to me. Soft scoops of vanilla bean ice cream floating in root beer. Or Coke. Or even Diet Coke.

Jay and my dad had one at Disneyland and I knew I wanted to make them at home.

I like to serve them in the 8 ounce jelly jars ~ just the perfect amount. Who am I kidding, I could polish off one 3 times this size.

We’ve all had that punch at baby showers at one time or another with rainbow sherbet and 7-up, right? When I saw this post, it reminded me of individual servings of this fun, refreshing punch.

Put your glasses {or jars} in the freezer to get them nice and frosty.

Add a couple scoops of your favorite flavor of sherbet.

Or just vanilla.

Top off with 7-up, Sprite, Sierra Mist, Fresca or any other lemon lime soda.

If you’re using vanilla ice cream, you can use root beer, Coke, Dr. Pepper, cream soda or even Orange Crush…like a 50/50 bar!

Orange Crush would also be perfect with orange sherbet, don’t you think?

The possibilities are endless with these little floats.

Simple. Sweet. Summer.

Pinch

Happy St. Patrick’s Day just in the {pinch} of time!

I was just kind of off today…we all wore green, but that was about it.

We received an invite to the neighbor’s for shepard’s pie and green beer and I just sort of dropped all plans to do anything here at home! Shame on me. The kids had a fun time at school and I had a good early morning walk and found a few {pots of gold} on my errand running! Oh, the little leprechaun DID turn out toilet water green ~ that was a hit!

Next year corned beef & cabbage and some Irish Car Bomb cupcakes, for sure.

Drunken Chicken

Jay’s been dying to make beer can chicken.

I LOVE that we have a grill now because he can help me cook more.

Be my guest. Not going to hear an argument from me.

Below is the recipe he used for the dry rub:

Memphis Style Beer Can Chicken

It really is quite funny to see it on the grill like this…

…but the end result is soooo tender and juicy.

I served with some red beans and rice.

We used a 4 pound bird and have enough leftover for another meal. I’ll make a big chopped salad with the rest tomorrow night.

Note: There have been claims that the beer can “explodes” the hot liquid onto people when they remove the chicken from the can. Please, please be careful and be sure to poke extra holes with a screwdriver in the top of the can after opening it and pouring out half the beer. Directions are in the above recipe for properly preparing your beer can chicken.

Meg’s Marg Plus A Bonus

Wet your whistle this Summer (or this weekend. or tonight.) with this fun twist on a margarita.

It’s courtesy of my amazing friend, Meghan.

You’ll need:

1 can limeade, defrosted
1 can Sprite, Diet Sprite, Squirt….you get the idea!
1 bottle Corona or any Mexican beer….or any beer for that matter!
1 cup tequila

Fill a large pitcher with tons of ice.
Mix limeade (do not add water!), soda, beer and tequila.
That’s it.
No blender needed!
Super refreshing and a little bubbly from the soda!

Then there is the “Hop, Skip and Go Naked”.
It’s the same gist…

1 can pink lemonade, defrosted
3 beers of choice (I use some cheap Bud Light…works fine)
1 can (use the lemonade can) full of vodka

Again, fill a large pitcher with ice and mix all 3 ingredients and let chill and dilute for a bit.

It sounds totally random at first, but believe me, you’ll be hooked…even if you think you don’t like beer!

The H,S&GN was our go-to beverage last Summer. I was introduced to it from some local SCV ladies and it’s sure to quench your thirst on the upcoming HOT Summer weekends!
