Hello friends and Happy Wednesday!

I don’t know about you, but I have several lists going on right now…

1. Next week’s grocery list

2. Thanksgiving Day grocery list

3. List of holiday goodies to bake

4. List of folks to deliver the holiday goodies to

5. List of gifts to buy and send

Etc.

I’m a list making fool these days.

Trying to pin down the treats I’m going to make this year for neighbors, teachers, office ladies, yard duties, lunch ladies, pediatrician’s office…

Etc.

I think I’ve come up with a few contenders and I wanted to share them with you in case you have NO idea what to bake, either…

{cake batter fudge}

With red, green & white nonpareils, of course!

 {lumps of coal ~ no-bake Oreo/marshmallow bars}

Not that anyone has been bad this year…..

{peppermint sugar cookie bars}

And you KNOW I’m going to make these!

{Blondies} Have More Fun

Edited to add: I am linking up with Jess’ PinterTest Kitchen over at Keeping Up With The Johnsons today {10.6.11} to share the Cake Batter Blondies. I am cheating a bit and have already posted this and do not have a play by play with fun commentary {next time!} but I wanted to share these because they were such a big hit. And how cute would they be with some Halloween jimmies {or Halloween Funfetti}, orange tinted frosting and some orange and black sprinkles sittin’ on top? And for Christmas….red and green jimmies in the batter with mint green frosting and some fun festive sprinkles atop? Adorbs, right? They are rich so I suggest picking up some cute mini muffin/cupcake liners and cutting them small and nestling them in the papers. The possibilities are endless with these things….Valentine’s Day? Cute. Cute.

I spy with my little eye some cake batter blondies on Pinterest…

I don’t think I’ve ever eaten a blondie in my life, but once I laid eyes on these, I knew that had to change.

Aren’t they fun? Don’t they just scream, “BIRTHDAY”?

I decided to whip up a batch to serve at this weekend’s birthday brunch.

I cut mine into bite-sized pieces and tucked them into mini muffin/cupcake papers. I used a little blue & green food coloring in the glaze to stick with the {theme}.

The recipe made double what you see. I’m going to pop them in the freezer and pull them out the night before the party. I figure I’d get as much prep work done beforehand to cut down on stress the morning of…

I may or may not have sampled a few as I was cutting them. I mean I wouldn’t want to serve something without sampling it first, right?

Now if I could please excuse myself…Jillian is {screaming} my name ~ off to shred I go.

Batter Up

Before I share Cake Batter Ice Cream with you, I wanted to back track a bit…

Last time we were in San Diego we went to a cupcake shop called Batter Up. It’s the cutest concept and the cupcakes were delish, but the store decor needed a grand slam.

It was pretty blah.

By the time we walked out, I had already redesigned the place and had a blueprint in my head.

Real live stadium seats bolted to the floor.

Old lockers filled with fun cupcake liners, cookbooks and all things cupcake related for sale.

Astroturf on the floor.

Pennant buntings hanging from the ceiling.

Apothecary jars filled with peanuts and cracker jacks.

Large glass vases holding baseballs.

The cupcakes needed some fun, festive baseballin’ names, ya know?

But I digress…

Now…back to Cake Batter Ice Cream.

This recipe is SO easy and SO out of this world…er…ballpark?!?

I ended up using whole milk for one of the 2 cups of whipping cream…made it a little lighter. Ha!

{2 cups whole milk, 1 cup whipping cream}

For the vanilla, I used the good stuff this time.

I was surprised at how creamy it was.

I tapped the cake mix through a mesh strainer to make sure there were no clumps.

Next time I will add rainbow sprinkles into the ice cream the last few minutes while the machine is running.

I only wish that I had red, white and blue sprinkles instead…

But, this ice cream was more than I imagined it would be. If you’re an ice cream lover and you don’t have one of these, you need to treat yourself to one!

Next up….some refreshing summer sorbet in our new sorbet cups!
