A Little Pick-Me-Up ~ No Bake Energy Bites

Tomorrow is Elliott’s teacher’s birthday and I wanted to deliver a little homemade goodie for her to enjoy with her morning coffee.

I saw these No Bake Energy Bites all over The Big P and figured they’d be the perfect little nosh for our very special teacher on her very special day.

Super easy {aka not exerting a lot of energy} to put together:

You’ll need old-fashioned oats {not quick cooking} ~ 1 cup, shredded coconut {I toasted mine in a dry pan over medium heat stirring often until lightly brown} ~ 1 cup, peanut butter {or any other nut butter} ~ 1/2 cup, flax seed meal {ground flax} ~ 1/2 cup, mini chocolate chips ~ 1/2 cup, honey ~ 1/3 cup and vanilla ~ 1 tsp.

Toast coconut, if desired, and let cool slightly. Dump all other ingredients into large bowl and then add cooled coconut. Mix well until incorporated and then chill in the ‘fridge for about 30 minutes. Scoop out {I used my handy dandy little scoop} mix, press in hand to mold together, roll into a little ball and then place on wax paper.

Makes about 20-22 bites.

I found a cute little bucket in the Target dollar bins, bagged them up in a cello bag with a bow and….done!

I did sample a couple and they are delish…not overly sweet, but totally satisfying. I highly recommend toasting the coconut…I used sweetened, but you could certainly use unsweetened.

I think this is the perfect morning nibble to go along with her favorite skinny vanilla latte.
