Office Space ~ EOY Office Staff Treats

Hello friends and Happy Humpday!

I’m back real quick with the second installment of EOY gift ideas.

Today we’re recognizing the hard working ladies in the office. They field and treat NUMEROUS daily health related & accident cases, track attendance, disperse forgotten items that are dropped off late, supervise students during recess and lunch who aren’t able to play out on the yard, etc, etc. Lord only knows what other behind-the-scenes situations they are faced with throughout the school year, but what I witness them doing on a daily basis is enough for me to deem them saints. Annnd, they always have a smile on their face.

I must confess that the perfect typewriter thank you card is from several months back at Trader Joe’s. My OCD gift giving self grabbed a few and filed them away for the end of the year.

I’m also making these sweet ladies and equally sweet treat in the form of these sugar cookie bars.

Summer-In-A-Jar ~ EOY Teacher Treats

We have 19 school days left until summer.

In my head that’s almost 4 weeks.

Which is a long time.

Spring Break Eats ~ Shrimp Po’ Boys & Orange Cilantro Coleslaw

Well, we definitely didn’t starve over Spring Break.

We finally went to Toppers Pizza and managed to eat there 4 times in 5 days. I’m addicted to the salad bar, but the pizza is fabulous, too! We took Jay there yesterday for lunch as he was unable to join us in our numerous earlier visits.

During Lent we don’t eat meat on Fridays so we enjoyed a roasted garlic, fresh roma tomato & mushroom pie…

Like, WOW! Like I could never eat meat again, WOW.

I like the pizza because it is thin, but not too thin and the crust is crispy and not too doughy. They also have a nice, fresh salad bar and a different selection of dressings like maple vinaigrette and chipotle ranch.

Last night for dinner we needed something meat-free, too. While Elliott & I were getting our toes done {finally!?!} I watched an episode of Diners, Drive-Ins & Dives and witnessed Guy Fieri inhale a shrimp po’ boy. Bingo. Our dinner idea was taken care of. I had also gotten a recipe from my chef friend, Leslie, for some Orange Cilantro Coleslaw that I’d been dying to try and thought it’d go well with the po’ boys.

When Googling the sammies, I got a little overwhelmed with several recipes and finally just went with Rachael Ray’s version for the shrimp and another one for the remoulade. I used cornmeal rather than the bread crumbs. I had originally wanted Jay to grill the shrimp to make them a little healthier, but then I figured I’d try the traditional way first and then if they were a hit, I’d try to health-ify them the next time around.

Let me just say, they were a TOTAL hit.

I ended up kind of making up by own remoulade ~ mayo, spicy brown mustard, lemon juice, sweet relish & Tabasco. Just dump all those things in a bowl, stir it up and spread some on your rolls before building your sandwich. I also used some super fresh Sara Lee French Rolls that were perfect for this. I heated them up slightly under the broiler first, too.

Here is how to prepare the shrimp:

Vegetable or peanut oil, for frying
1 large egg
1 cup milk
1 1/2 pounds large shrimp, deveined
Salt
1/2 cup flour
1 cup cornmeal or bread crumbs
2 tablespoons seafood seasoning a couple of palm fulls (recommended: Old Bay) —–> I used cajun seasoning

Preheat 1-inch of oil in a deep skillet over medium to medium-high heat. —–> I used about half that and it was plenty {shallow fry}

Pull shells & tails off shrimp. Beat egg and milk together. Salt shrimp then soak in milk batter. Mix together the flour, cornmeal or bread crumbs and seafood seasoning in a bowl. Using tongs, remove a few shrimp at a time and coat in breading. Add breaded shrimp to the hot oil and fry them 5 to 6 minutes or until firm and deeply golden all over. Place on a paper towel lined plate.

Spread some sauce onto your rolls followed by some lettuce and tomato slices. Add several shrimp and you have yourself a taste of Louisiana.

So good.

Orange Cilantro Coleslaw 

{ recipe courtesy of Leslie Babikan by way of Jo Lafferty 😉 }

1/4 cup fat free plain yogurt {I used Greek}

1/4 cup light mayo

1/3 cup chopped cilantro

1/4 cup orange juice {I used the juice of one orange and the zest, too}

3 tbsp. white vinegar {I used rice vinegar}

1 1/2 tsp. honey

7 cups shredded green cabbage

1 cup shredded carrot

1/2 cup chopped red onion

salt & pepper to taste

Whisk together the first 6 ingredients for dressing. Add cabbage, carrot and onion. Cover and refrigerate for at least 3 hours to blend flavors.

So light and summery. I love different variations on coleslaw and will be making this lots.

Frozen Swim Trunks & Mayonnaise

Hello, friends!

It’s Spring Break over here at FFF and we just returned from a few days at the beach.

We were invited to share a beautiful beach house with some friends in Oxnard, just about 50 miles west of us. The trip is a quick hour door-to-door which is the perfect getaway in my opinion. We came home yesterday since we have dance class today, but will drive back through Heritage Valley tomorrow to spend one last day on the sand before we complete our Spring Break with a family day on Friday, soccer & baseball games and birthday parties on Saturday & Sunday.

After early morning games this past Saturday, we loaded up the car and made our way out the 126 to the coast. We stopped along the way for a flat of fresh California strawberries.

We quickly settled into our surroundings and headed to the beach only to find it ridiculously windy, cold and the least bit fun. We got the kids sand-free and had them get showered and in their jammies for the night while the mamas relaxed, read some magazines and had a little happy hour! Our first night was graced with a gorgeous sunset…

The next morning the kids were chomping at the bit to get down to the waves, so we headed across the street and I sat as lifeguard for several hours while they frolicked ~ made sand forts, boogie boarded and cartwheeled in the surf.

OK, let me talk about the ONE negative about this trip. The TAR. I grew up in San Diego. I lived in Long Beach for a year. We’ve visited several beaches in Northern California. Been to the Oregon Coast. East Coast. New England beaches. I’ve been to Hawaii. The Virgin Islands. Mexico. And I have NEVER heard of tar washing up on shore! I was not prepared for the tar. The worst part is that you can’t really avoid it. I tried to watch my step the whole time and that is when I picked up the most. So strange…..but you have to slather mayonnaise {or any oily substance} onto your feet to remove the black goo. Then you have to go rinse off the Best Foods before you go inside! It’s. A. Process. Holden was the only one that managed to get it on this rash guard and swim trunks! Apparently first graders like to roll around in the sand more so than third & sixth graders. I had to freeze his beach wear in order to flake off the big chunks of tar!!

Needless to say, after the tar removal process, NOBODY was going back to the beach until a new day dawned. Thankyouverymuch.

After a day of lifeguarding and making sure everyone was safe, de-sanded, de-tarred and showered, the mamas were ready for this…

Before dinner, we took a walk to the marina where we watched a group of sea lions soaking up the last rays of the day on a dock…

We took turns with cooking which always works out perfectly. Saturday night it was spaghetti, garlic bread and salad and Sunday the kids had tacos and the mamas had huge taco salads.

Again, we were blessed with a beautiful sunset and actually caught the green flash at the very end.

For dessert, we cozied up on some big chairs under a soft blanket and enjoyed some strawberry shortcakes made with the sweet local strawberries.

Yesterday we spent another few hours enjoying the view of Anacapa off in the distance while the kids did their thing on the beach.

Before heading home, we stopped for lunch at Toppers for pizza. One recently opened in town, but it’s been too crazy so we hadn’t tried it until yesterday. They have an amazing salad bar and the kids shared a small pizza all for $14.

We had a wonderful time. I enjoyed just sitting and watching all 5 of them laugh and run and play.

No rushed mornings. No backpacks. No lunches to pack. No homework.

Great Aunt Alice

I come from a very small family.

I have one uncle on my mom’s side.

I have no first cousins.

However, my mom has several cousins and growing up we were particularly close to two of them ~ LouAnn & Sharon. They both have kids my age and a little younger so I’ve always considered them my first cousins even though they are actually my third cousins. Back in the mid-80s to mid-90s we would get together annually during the holidays and trade off houses between Long Beach, Mission Viejo/San Juan Capistrano and our home in San Diego. We always had a huge feast, visited and exchanged gifts. LouAnn & Sharon’s parents, Uncle George & Aunt Alice, were fabulous cooks and the holiday tables were bursting with good food. I will always remember these small, intimate gatherings with our little family.

Unfortunately great uncle George passed away in 2000, but we of course continued to see aunt Alice and were honored that she was able to attend our wedding almost 10 years ago.

Well, today is her 95th birthday!

We travelled to the Temecula area this past Saturday afternoon to celebrate. The little clubhouse in her HOA was packed with so many of her dear friends and family. She was overjoyed with the kind words spoken from the mouths of these friends that have known her for decades. She was taken aback by all the cards and gifts bestowed upon her. But I have no doubt that she felt special and now knows what an impact she made on so many lives over the years. It was a honor to attend and brought back so many memories from our visits years ago.

Our lives have now taken us to different states and onto different seasons, but we’re always together for the milestones.

I don’t know what it’s like to come from a big family, but I’m sure happy with my little one.

The happiest of happy birthdays to you, Auntie Alice! Wishing you many blessings in the next year and always….

Busy Calendar

Hello and Happy-day-after-St. Patrick’s Day!

Our day of {all things green} was just like any other Monday pretty much.

It started out with my favorite pair of gold Havaianas having a blowout in the same spot as all my other well-loved pairs. The little part between the toe gave way and forced me to switch to my gold flats. Havaianas are my absolute favorite and I did get 3-4 years out of these, but I imagine the chlorine from the pool and the trips to the beach eventually take their toll on the rubber…..sad face.

Mama Leprechaun dropped the ball on the once-a-year-Lucky-Charms-for-breakfast deal so she popped them in the car for a donut with green icing and shamrock sprinkles at Albertson’s on the way to school instead! Not the best breakfast to start Health Week off with….

We had a leprechaun come and turn our toilet water green which seemed to freak the kids out a little more this year.

Last week I sampled a precooked corned beef brisket at Trader Joe’s and immediately knew I was going to serve it on a hectic, homework-filled St. Paddy’s Monday night. Fortunately Mondays are our “easy” days and we have nowhere to be, but it was nice to know all I had to do was heat the brisket for about 30 minutes in the oven and sauté up some cabbage and onions to make some sauerkraut! I also squeezed a couple drops of food coloring into a lone bottle of Mexican beer and hit it with a little lime juice for an adult after 5:00pm treat while I prepared our Irish feast.

Holden brought home a friendly little leprechaun and I updated our “days until” sign {which hadn’t been updated since Christmas!!}. That was the extent of SPD at Chez Aspiras!

And as for our nice, quiet, after-the-holidays schedule……that is all coming to a screeching halt and the calendar is quickly filling up again.

Elliott is back in full swing with Spring soccer through AYSO and is on another great team. They’ve played two games and walked away with a shutout in game one and managed to tie game two up this past Saturday. The Spring season is a lot more relaxed as there are no playoffs and only 8 games, but it is a great way for the kids to keep up with their skills and build up their momentum for the Fall season. We are so proud of her as she ASKS to go and practice at the park above and beyond her normal practices. She was chosen to be a team captain this past week and Jay captured this sweet picture of her teammate and her after they won the coin toss…

She also has stepped up her dance game and has taken on another class aside from her Friday hip hop & jazz. Last week she went and tried a lyrical class with her friend, Tiffany, and came home so excited to show me what she had learned. In one hour she had mastered choreography for the Spring recital number and the teacher asked of she was doing the recital! I thought the deadline had passed to order costumes, but apparently it was extended so BOOM she’s enrolled in one more dance class during the week and I ordered her second costume for the recital.

This warms my heart as lyrical is one of my most favorite styles of dance and I have been nudging her to take this class for a couple years now.

I feel so blessed that she can go from aggression and speed on the soccer field to beauty and grace in the dance studio. I pray that she will continue to grow in both of these activities and is always able to keep one foot in a soccer cleat and one foot in a dance shoe.

Holden is about to start Spring baseball so we will throw in a practice during the week and a Saturday game into the calendar for the next couple months. He is very excited and received new baseball necessities from Gramma Kathy for his birthday last month ~ fancy cleats, official baseball pants with a big boy belt {no more drawstrings!}, a bat and some awesome batting gloves. I need to uncover his right-handed glove out in the garage and he’ll be good to go! He hasn’t played since being on the cutest little t-ball team 3 years ago, so this league will be a great way for him to be reintroduced to baseball.

He and I also enjoyed a little mother/son bonding time at a PTA sponsored bowling event last weekend. Our team made our own tie dyed shirts which was a first for me and so much fun. The afternoon of bowling was equally as fun and we can’t wait for next year!

The weeks are simply flying by. Aside from these activities, they are both doing after school activities and their weekly religious education classes. Spring Break is on the horizon and that just means one thing…..Summer is not too far behind!

As mentioned in my last post, our summer is going to be filled with events leading up to the marriage of my brother-in-law to his precious finace in late July so we have all that goodness waiting for us on the books, as well.

Feeling so grateful for our busy calendar.

One Of Fourteen

In 2013 Jay and I went to a beautiful convalidation {when the Catholic church “convalidates” a civil marriage} in April, an emotional vow renewal in July, a tropical 25th wedding anniversary in October and a gorgeous wedding on a sunny afternoon in November.

Each one was sacred and an honor to attend. All these precious couples are from different seasons/decades/times of our lives and I love that, even through the miles, we can come together to celebrate the beauty of marriage at one stage or another.

I adore weddings. I adore being IN weddings.

It’s been well over 10 years since I stood up in a wedding and was part of the bridal party.

Just days into 2014 we received the official news of my brother-in-law’s engagement to his sweetest girl, Anuja. We knew it was coming and I got tired of giving him a hard time!

Well, it looks like this year will be a very exciting year for our family….all four of us will be in the wedding ~ Jay the best man, Elliott a flower girl, Holden a ring bearer and I will be one of FOURTEEN bridesmaids.

Yes, 14. So exciting!

The big day is in late July and we couldn’t be happier. Our summer will be complete with this monumental milestone of welcoming a new member into the Aspiras Family!

Needless to say, I am in planning mode and the first thing I need to do is go order my dress.

“Punch” is the color and this is the style I chose…

On the hunt for silver shoes…

So glad Lent is about a week away. I need lots of discipline for the next 5 months. Hoping the seven weeks leading up to Easter will pave the way for healthier choices and increased activity to take better care of the temple.

Always a struggle, but it’s good to have a goal and something to look forward to.

Curbside Birthday ~ A Game Truck Party

This past Saturday we celebrated our PS3/Minecraft/Skylanders/Wii lovin’ little man with an early morning game truck pajama party. How’s that for a run-on theme? While doing my research on local game trucks, I noticed that the rates were lower if the party was held before noon. I was shooting for a 10am-12pm time slot, but only 9am-11am was available on the date that we wanted. I immediately said “yes!” and the breakfast menu/pajama party was born. What first grade boy wouldn’t want to roll out of bed on a Saturday morning and step into video game heaven for a couple hours? And then follow that up with some donuts & sugar cereal?

It was perfect.

Invitations were homespun and printed on brown paper blank notecards with which I mod-podged on a little mustache to tie in with Mario & Luigi of the Super Mario Bros. fame. I realize the mustache craze has been around for awhile, but I’m still drawn to the whimsy of it and thought it was perfect to weave into this party.

The game truck grub was simple and included both sweet & savory treats. The mini cereal boxes were a must as well as monkey bread, homemade Cinnamon Toast Crunch donuts and a sausage & hash brown casserole. In hindsight I could have grabbed two dozen bagels from Noah’s instead and called it a day, but……..

Party favors were a pair of Skylanders socks, Mario Bros. fruit snacks and cinnamon red hots tucked into a glass mason jar with a lid. I’ve become obsessed with this little dollar store find since the holidays. I also included a little note to thank Holden’s guests and a recipe for his favorite smoothie {the girlies got a 3-pack of super cute dollar store neon mustache socks}.

I can’t say enough good things about the game truck company. Our game master, Jeff, was awesome and got the kids up and running in no time.

Two hours was PLENTY of time and Jay and I were actually surprised at how unrushed it seemed. Once the truck pulled away for the next party, we gathered around, sang and had “Skylanders Rice Krispie Treat cake” and Creeper cake pops!

This was the easiest party ever ~ curbside service and nobody had to come inside the house. Holding it in the garage was a great excuse to sweep and straighten up, too!

A HUGE thank you to all the little gamers that came out to celebrate with Holden. He had a fantastic time and told us this was the most epic party ever!

After over 4 years of blogging, these birthday party posts are my absolute favorite to write. I love reading other blogs and seeing how their parties come together and where they gather their inspiration and supplies.

Thanks to Jay for all the great pics. There are TONS more, but I’ll spare you. 😉 He rented a camera {Sony A7} to try out for the party and was pleased with the results. It’s a great way to try a certain model before you jump in and make the purchase. You can also rent lenses, too!

1D & TMNT ~ A Valentine’s Day Shoot

A couple weekends ago we ventured out to shoot some fun valentine photos. Jay actually rented a camera and a lens to try out for the weekend so it was perfect.

Trying our best to capture more pictures and videos of the kids because these days, weeks, months and years are going by way too fast for my taste.

We broke it up into two separate days at two different locations and managed to get some cute shots.

The kids had “Formal Day” at school on February 13th since they had a 4-day weekend for President’s Weekend. They exchanged valentines and received HOARDS of candy ~ my friend, Leslie, dubbed it “Valoween” ~ appropriately so!

Well, Superbowl and Valentine’s Day are over…to me, those are the two big days that kind of kick off the first couple months of the new year.

Next up….Holden’s Birthday.

HOW is he going to be seven?

We experienced a big milestone this week.

It happened quickly.

My mama heart didn’t have time to prepare.

Holden had complained about one of his top teeth hurting when he bit into things, but it wasn’t visibly loose. He was eating his cereal on Tuesday morning and apparently his spoon got caught in the space between his two front teeth and when he pulled it out it broke the root or something because we went from two seemingly solid teeth to one Nanny McPhee snaggletooth in point five seconds.

He said he couldn’t finish his cereal {because of his wiggly tooth}, opted for a glass of milk instead and off to school we went.

Only to have him come out at dismissal looking like this…

He was so funny. He couldn’t eat his snack. He couldn’t concentrate on his homework. However, he was able to play PS3 oddly enough.

I kept thinking to myself that I can’t send him to school with his tooth looking like a “door” as one of his cute little classmates called it. And he certainly wasn’t going to have an absence based on his protruding chomper, sooooo that left the only other option…..pull it out!

Elliott has lost several of her teeth while brushing so I told Holden to go up and brush his teeth and maybe it’d come out. Sure enough after his shower he screams, “My tooth is out!” and comes running downstairs naked with his little central incisor in his hand. I stuck it in a ziploc and labeled it for the Tooth Fairy while he went and grabbed his towel…

He was so proud.

He’s been a little later than most to lose his teeth. He’s only lost the bottom two and this was his third. But there is something about those top two teeth….they’re like the last, most noticeable, bit of baby-ness. Those two little white nubs that first cut through his little gums so many years ago {6 years ago, to be exact}. Once they lose those, they immediately take on the adorable toothless first grader look and adopt the cute little lisp until the permanent adult teeth come in and they take on a whole new more mature look!

I can handle growing feet and trips to the Vans store for brand new, comfortable shoes. I can handle buying the next size up skinny jeans. Heck, I can even handle a major haircut that adds on a couple years.

But those two front teeth…..they hold something special in my heart. The toothless grin will have to make up for that last bit of “baby” to leave because there’s no going back.

Just a reminder to slow down and cherish this season even though some days are challenging and long.

Let the teeth take their time. Don’t force the wiggle. Just let it loosen up on it’s own and slowly await the awkward, caddywhompus protrusion phase until it just falls out on it’s own.

There is no hurry.

I did also have to pick up a new pair of jeans in the next size up this week, as well. It’s been a double whammy.

The bright side is that Holden will be seven in 18 days and is just now wearing size 5 jeans.

I can handle that.
