Waiter, There’s A {Meatball} In My Soup
A few weeks ago Jay and I went out to a quick dinner to celebrate our anniversary.
We decided to try a Mexican place that we’d heard good things about. We shared a cup of albondigas and it was excellent! I’ve actually been thinking about it ever since. When I saw this post on one of my new favorite blogs, I knew it was a sign that I had to make it. Plus the fact that I had some leftover rice sitting in the ‘fridge AND plus the fact that it’s been COLD and drizzly all day!
I followed the recipe, however, I sauteéd sliced baby carrots, onion and garlic but did not add the canned veggies. I also just crushed up some store bought tortilla chips rather than frying up my own. The recipe calls for cumin, but didn’t mention when to add it ~ I just added it to the meatball mixture and it gave them great flavor!
I topped with shredded cheese and some avocado chunks. A squeeze of fresh lime and some cilantro confetti would have put it over the top! It was perfect for this chilly, Saturday night and just what the doctor ordered for my cold. Next time I think I’ll add maybe some diced tomatoes and the green chiles for a little more kick.
