    YUM! I’m going to make those carnitas this weekend as I have a pork shoulder in the freezer. Regarding all the leftover rice, I always do that too. Here’s what I do — I freeze the leftover rice and dump it into one of my mish mosh soups. I tend to make one of these soups each month. Some combination of whatever meat I have, veggies, etc. And I’ll throw in whatever rice I’ve saved (often it’s Spanish rice). It’s amazing how that flavored rice gives the soup so much new flavor.
