Uh…Can I Get A Meal With My Salad?

Tonight I made a chopped salad with spinach, strawberries and almonds dressed with poppy seed goodness. I’m pretty sure Jay was wondering the whereabouts of the rest of his dinner.

This salad was inspired by my friend, Janet. I needed to make it more of a “meal”, so I added chicken and blue cheese.

Here’s the line-up:

First, I defrosted and grilled about 6 chicken tenderloins with olive oil and some Montreal steak seasoning.

Then I just chopped up some fresh baby spinach, strawberries and the chicken and tossed with toasted sliced almonds and blue cheese crumbles. I added just a touch of the poppy seed dressing and tossed again.

I think this is my new favorite salad!

If your significant other is still hungry after eating this salad, you can offer them the leftover chicken tortilla soup from 3 nights ago.
