Pollo Two Ways {a la Pinterest}

Lately I’ve been at a loss of what meals to prepare…trying to eat healthier, but keep the menu exciting.

I also haven’t been spending a lot of time on Pinterest, but remembered that I have oodles of recipes just waiting to be tested. I clicked around and was reminded of two which I made this weekend ~ both yummy and on the healthier side. Win. Win. At least in my book!

Crispy Grilled Southwest Burritos

 Suuuper yum….just used some PAM on my grill pan and they turned out crispy and perfect!

Tonight we tried Chicken Tamale Casserole from Cooking Light.

This, too, was delicious and different.

I served it on a little chopped romaine and garden tomato salad with this spiiiicy sauce as a dressing. If you can handle heat and you want a lo-cal dip, dressing or condiment, you need to make this. I’ve had the Pioneer Woman version {made with full mayo}, the reduced guilt version that I attempted {half mayo, half light sour cream and the juice of 2-3 limes} and Julie’s brilliant concoction {fat free greek yogurt and lime juice…and the chipotles in adobo, too, of course!}. I can tell you that I cannot tell the difference AT ALL in all three versions. Julie is a genius and did the math on the calorie count for us and all you need to know is go with GREEK!

This sauce can go on anything that you want to spice up ~ baked potatoes, sandwiches, eggs, tacos, burritos, salads, fresh veggies, nachos, fish, burgers, etc.

 Make some….it really is awesome at 7 calories a tablespoon.

Attempting some homemade peanut butter frozen yogurt this evening. I hope to be able to come back and share that recipe with you, too!

Rummage Sale

A random pile of facts from our weekend…

1. Made {Baked Oatmeal} for our Saturday breakfast.

{followed the link above, but subbed almond/coconut milk and coconut extract}

Such a fun twist on regular ‘ol boring oatmeal…next time I’m adding some fresh berries to the mix.

2. We had an impromptu garage sale on Saturday morning. It was more like a rummage sale. I just threw a bunch of stuff out there and came up with a price when they asked!

Made about $20 an hour for stuff that I would have driven to Goodwill…I’ll take it!

3. Holden cried when a woman walked off with his Baby Bjorn potty chair. He said, “You’re selling all my stuff!” About broke my heart, but he wasn’t about to coax me into keeping stuff that I’m trying to get rid of, so he went inside and watched a movie while mama purged!

4. Fun bowling birthday party with this delicious pizza for lunch.

5. Little Church and my scripture study were cancelled for Sunday morning, so we went to Saturday evening mass instead.

6. Made Rachael Ray’s Buffalo Chicken Chili Mac for dinner.

Super yum and lowfat. I used reduced fat cheeses for the top ~ blue cheese and mexican blend.

7. Sunday morning was lazy with clouds, rain and Pioneer Woman’s Super Sonic breakfast burritos!

I think I got a little too aggressive with the fillings, but they were to-die-for.

8. Kids talked me into taking them to Elliott’s new dance studio’s grand opening in the POURING rain just to jump in the germ infested bouncy….

Chaos.

Waste. Of. Precious. Gas.

9. Jay didn’t like the quote the dealer gave him for new brakes on his Jeep, so he did it himself.

{We did have to make one minor trip to a “professional” for a quick fix-it, but other than that we saved a ton of cash. Thanks Pep Boys for the parts and YouTube for the brake changing tutorial!}

10. Had the Sushi Bake again for dinner last night. We’re hooked.

Stick With Love

Today is the official LAST day of winter break.

I told the kids last night that they were going to be fed, bathed, teeth brushed, books read, excuses for more milk done and IN bed tonight at 7:45.

Watch me.

I am NOT looking forward to tomorrow morning…

With that negativity out of the way, I must say that we had a nice, family weekend to say goodbye to the past three and a half carefree weeks.

While my car was being serviced in Lawndale on Saturday morning, we all piled into Jay’s Jeep Wrangler and headed due west to the Manhattan/Hermosa Beach area and searched for a breakfast joint. We settled on Brother’s Burritos and were pleased with the casualness and local vibe at this little place. The kids shared Hawaiian Bread French Toast squares…

I was bad and had the egg, avocado, bacon and jalapeño burrito with spicy salsa. We ended up not eating lunch so I didn’t feel so bad.

After breakfast we let the kids play on the beach for a bit to kill time. Jay shot some great pics ~ it was overcast and a bit cloudy ~ perfect picture taking conditions.

The fam also took a last minute trip into Hollywood for an appointment yesterday afternoon and then ended up at a new {to us} sushi restaurant right in our own backyard here in Valencia ~ Sushi One. Yelp gave it great reviews so we gave it a try. Jay and I shared a Sapporo and some rolls and the kids devoured the bulgogi {Korean beef} and steamed rice! Here they are with their after dinner lollipops…

Trying to be better at meal planning…cuts down on a lot of problems like not knowing what’s for dinner at 5:00pm, unnecessary trips to the market and going over budget on groceries.

I decided to keep it easy with familiar/already tried recipes this week since it will no doubt be hectic trying to get back into the swing of things routine-wise.

Here’s what will be on our table this week…

Monday : Half of a grilled beer can chicken {Jay’s off today so he can grill}, zucchini fries and TJ’s Harvest Grains blend {Israeli couscous, orzo, baby garbanzo beans & red quinoa}

Tuesday : Chopped taco salad with spicy sour cream ranch

Wednesday : Moo shu pork burgers w/ fruit salad

Thursday : other half of the grilled chicken in soft taco form with roasted butternut squash

Friday : Leftover moo shu pork burgers & tbd side dish

A Splash Of Milk, A Pinch Of Salt & A Gallon Of Patience

Last night before going to bed, Elliott had an idea to don our matching ladybug aprons, have Holden wear her green one and make breakfast burritos this morning.

I’m glad she came up with the idea last night so I had plenty of time to get in the right frame of mind for having TWO sous chefs in the kitchen.

And working with eggs.

I am really trying to listen to their interests and cater to them and I am thrilled that they see me in the kitchen loving the chopping, measuring, sautéing, flipping, roasting, etc. and want to join in. However, we always need to add one crucial ingredient to the recipe when they are helping and that is PATIENCE. I know they are four {almost 5} and 6.5 and I know that we are going to have spills and be fishing egg shells out of the bowl, but I still have to channel my inner peace and say, “It’s OK…this is how Giada and Tyler and Rachael and Bobby started out…”

I can re-bleach the grout and re-Swiffer the floors, no problem ~ {smiling with gritted teeth}.

The kids have a much different idea of what goes into a breakfast burrito than I do, of course.

Tortilla. Eggs. Roll up. Done.

Mine was over the top with some leftover crumbled sausage, a couple slices of a forgotten avocado in the produce drawer, a sprinkle of cheese, some cilantro {parsley as Elliott calls it}, a little dollop of light sour cream and a whole lotta shakes of the Cholula bottle {and the scrambled eggs of course}.

Elliott was in charge of the drinks and served up a mean ice water and two apple juices complete with Cutie garnish on the rim {all her idea ~ she’s catching on!}…

You know what? Breakfast burritos and {patience} do pair well together, after all.

Thankful that my babies do want to wear their aprons and explore in the kitchen.
